Categories

This is a general question: if I would like to build a site about wines, and categorise wines under:
Price: low, medium, high
Grape Variety: merlot, cab sav…
And so on… could I achieve it with wordpress? and if so, please share how?

I know I can use the keywords as categories but but if I wanted to keep it in groupings?
I would probably also would look into using a tag cloud as well.
