I mistakenly posted this under another subject -- sorry.
So, here we go. This is a general question on how-to:
I would like to build a site about wines, and categorise wines under:
Price: low, medium, high
Grape Variety: merlot, cab sav...
And so on... could I achieve this with wordpress? cause I am only aware of one level of categories. Could I create 2 levels of catgories with top level as "price" and sub category of "low", "medium"....
I know I can use the keywords as categories but if I wanted to keep it in groupings?
I would probably also would look into using a tag cloud as well.
Any help would be much appreciated.

Yes, WordPress lets you define a category as a 'child' of another (to set this go to Manage > Categories, edit a category and select category parent). You can nest them as deep as you need.

Is there any way of hiding sub-cateories except when its parent is selected? I have played with the parameters to wp_list_categories without success.
Also, is it possible to only show posts in a category without also showing all posts in all child categories too.
I have many sub-categories but these two problems make it look an unmanageable mess.
I can't find a plug-in or hack for v2.3.1.

yeah u can easily categorize them. first select parent category as parent category and in child category select the parent category from list.
Now go to Design in wordpress 2.6.1 then do to widgets and in widgets select the cataegory widget currently activated.
Edit the categories option and select Show hierarchy.
You will see a category tree in your sidebar where the parent category & child category will be present.
