I also have another website with the exact same plugins and that does not have this issue.
Also I cannot change any of the express checkout options. They are stuck with Apple Pay/Google Pay & Link by Stripe switch on and Amazon Pay switched off.
I cannot switch off Apple Pay/Google Pay & Link by Stripe or switch on Amazon Pay.

I can understand your concern. Currently, there is a known issue on some sites where the Link payment method cannot be disabled properly. However, other express payment methods should normally still be manageable independently.

Could you please record a short video showing exactly what happens when you try to enable or disable these express checkout options? You may use one of the following tools to record and share the video:
Additionally, please share the following information so we can investigate further:
• System Status Report — available under WooCommerce → Status
• Fatal error logs (if any) under WooCommerce → Status → Logs

This plugin is so unreliable I’m going to try woo payments despite all the disadvantages of using stripe express

I am experiencing exactly the same issue. Cannot disable Stripe Express checkout from the Plugin nor the Stripe dashboard.
Same issue here, i keep unchecking it in settings, then save, then refresh page and its back to checked. Causing issues with our custom fields on checkout not being recorded against orders. super annoying please fix asap! here is a screen recording of the checkbox returning to checked after saved as unchecked then a refresh

Same problem here, and we’ve got a JS error “Uncaught Error: Stripe initialization data is not available” on all our product pages because of the express-checkout.js that it load
