So sorry to hear you are running into this issue on your site! As a first step, here’s what I’d recommend:
1. Access your site via FTP
2. Go to wp-content/plugins/ and find the woocommerce folder
3. If your hosting provider hasn’t already done so, rename the woocommerce plugin folder to something else, e.g. woocommerce-old.
4. Log in to your site’s admin dashboard – WooCommerce will be disabled at this point, so you should be able to access your admin dashboard
5. Go to the Plugins page
5. Install a new copy of WooCommerce from the Plugins page. This will not overwrite any of your products or data, it will just give you a new copy of the WooCommerce files
6. Activate this new WooCommerce
Please let us know if that resolves this issue, or if you are still seeing the 500 error once you’ve manually reinstalled WooCommerce!
