I do have a question about the importing.
Will it automatically import (or sync) when I have new recipients in my Mailchimp account?
I have a plugin that only uses mailchimp.
But I love using mailpoet for newsletters and everything else.
I want those mailchimp recipients added to my mailpoet list automatically if possible.
Is that a function of the import feature using the API key?

The import process, even if you use MailChimp’s API is a one-time process. That means that you would need to repeat it periodically.
Having said that, MailPoet also has an API that can be used to manage subscribers (and sync them with MailPoet). While that might require coding skills you could try to use a service as Zapier.

I have a few plugins that use mailchimp exclusively but I would rather use mailpoet for email correspondence.
