Associating Pages with Categories

Hi guys!

Okay so I am trying to create several different blog pages all with different templates (included in my theme) and then be able to assign certain posts to certain pages. Now I understand that usually people would do this using categories but if I use categories I cannot set a specific template because the page for a category is automatically generated. How do I associate a certain page with a category so I can edit the page and still assign posts to it?
