Is it possible to always start a blog with the same post, and not the last post? I see an option, but when i try to select my “default” page, it doesn’t appears listed, only the ones i created myself.

A post and a page are different. You can only set a page as the home page. Just copy the post into a page then set that as the home page.

So, i actually create a hidden page, and point to there.

Why is it that i can’t select the default page? Is a page like the others.

What do you mean by default page?

The alternative is to edit THE LOOP.

    What is THE LOOP?

Under Options -> Reading -> Front Page options you can set a page to be the page a view sees. I use my About page.

You can read all about the loop and editing it in the Codex.
