Admin setting is confusing

When I consult the Admin helppage at http://contactform7.com/admin-screen/
it is still not clear to me how to fill in the settings of the mail fields/In the “From:” field it is now written [your-name] <[your-email]> Is this a tag referring to some standard settings? or should i replace it with for example
Option 1 [John Doe] <[john@gmail.com]>
or
Option2 John Doe <john@gmail.com>Same for the Subject field where is written: [your-subject] Should i leave that or replace it with a subject text without [brackets] ?
