You’ve got a couple options. If you just want to replace the Closed text that would normally appear with something else, I’d recommend you use a translation tool, like Loco Translate:

You should be aware, though, that the plugin still treats this as a “closed” time when it outputs the schema.org markup. Google doesn’t understand “by appointment”. It only understands open and closed hours, so your listing there will reflect the actual hours you input.
Alternatively, you can use the plugin’s templating system to output a custom value for whatever day you’d like. It’s a bit more manual, but you can choose the hours you want to indicate open/closed separately from the language you display to an end-user:

Thanks Nate – I ended up not setting an hourly open/close just leaving it as an all day – so it said ‘Open’ and then overid that with a language file change
