There are a few ways you can do this. I think the easiest way will be using categories since you want a different set of posts displayed on each page.
You can put your posts into different categories, and then add a link to the primary menu for each of these categories. Here’s a tutorial that covers how to add category links to your menu: https://www.competethemes.com/help/customize-menu-tracks/
The end result is that visitors can click on the various menu links and be taken to completely separate listings of posts.

Now I ask – can I have a static page display a chosen list of categories? In the style of the tiled blog posts?
I have a static page ‘Diaries’, where I want to display ‘Diary 1’, ‘Diary 2’.. (using ‘Diary x’ as the category name), and when the diary is chosen, a new page lists the individual posts within that diary.

Whenever displaying a list of posts, it’s best to use an archive WordPress creates for you. In this case, you could make a category called “Diaries” and create three sub-categories: Diary1, Diary2, Diary3.
In your menu, you could make a dropdown menu with these categories, so when someone hovers over the “Diaries” menu item, they see the three links to the sub-categories too.
You could also use a static Diaries page and link to each of the sub-categories there as well.
