While we don’t have a feature for custom field support on the new Schema markup in Yoast SEO, we do have a feature request open for the GTIN and some other relevant fields. So, this may include in a future update.

you should add this fast, otherwise you loose customers to plugins which are already are able to.
This should be no big deal to add this to the yoast woocommerce plugin.
