Dear @aidanhockey5 we apologies for the issue.
Our team works on the solutions everyday.
But the plugin may not crash by itself probably every week you make updates. Just try not to make updates for some time.
For anybody else that has this issue, I’ve just attempted a temporary solution:
1) I went through via FTP to my sites’ plugins folder (/wpcontent/plugins) and deleted the portfolio gallery folder. Your portfolio’s will remain safe, but you will have to re-install the plugin.
2) Once the portfolio plugin was re-installed, your portfolios should automatically come back and the site should start working again.
3) Finally, I went into my plugins page on WordPress and went to the “Edit” link under Portfolio.
-In “portfolio-gallery.php,” you should see a version number in the header area.
For example:
Plugin Name: Portfolio
Plugin URI: http://huge-it.com/portfolio-gallery
Description: Portfolio Gallery is a great plugin for adding specialized portfolio galleriey, video portfolio gallery of just a gallery with single images.
Version: 99.99.99
Author: Huge IT
Author URI: http://huge-it.com/
License: GNU/GPLv3 http://www.gnu.org/licenses/gpl-3.0.html
Text Domain: portfolio-gallery
Domain Path: /languages
Notice how I changed my version number to something huge, like 99.99.99? This will hopefully prevent the plugin from auto-updating to a new version. This seems like a really hacky work around. Really would like to see this fixed officially. I’ll reply to this thread again if this workaround ends up failing.

Thank you for this information. Avoiding the updates is helpful for those who have set the auto update, but if you run manual updates then just don’t click on update button till in changelog we announce about fixing of this issue.
But if you very much need to make updates, then following the description below delete and install the plugin again
