I was wondering if there is there a way to export the volunteer/opportunity data?

Unfortunately, right now there isn’t a way to export the volunteer data. You can export the opportunities by using the built-in WordPress export tool. You can read more about it at https://codex.wordpress.org/Tools_Export_Screen.
