Ok, I have just solved it myself only by luck!
So the Token created by the link in this plugin didnt work. However, I just installed a Instagram Feed App and there you of course have to get the Token as well. I compared the two and they were different. Now that I have inserted the right Token, the Instagram counter works!!!
So for all with the same problem, try the follwing:
1) Install the plugin “Instagram Feed”
2) Go to settings of this plugin and get the instagram token
3) Copy this token into the correct field in the settings of your “Social Count Plus” Plugin
4) Enjoy
5) If not needed, remove the Instagram Feed Plugin
To the developer of Social Count Plus: In case I am not the only one with that problem, please check, how the token is taken in Your plugin, maybe there is something wrong

The copied token was (old) wrong but with the installed plugin I took the correct one!!
