    I just noticed, it is giving this at the top of the page:

    Plugin could not be activated because it triggered a fatal error.

    How does one check their PHP version?

    There are some ways for it.
    At first you can check a settings of your server. Usually hosting provides ability to check and change the current PHP version.
    If not, you can use this method:

    It’s weird because I used the method you provided and it’s not working. It’s not being processed on the server. All it does is spit back the code that I entered.

    The most simple way to find information about PHP version is check it in the your hosting admin panel or send request to the hosting support – they must know what PHP version is used on your server.
