Each one of your authors should be able to link their account to a WordPress.com account, and will then get their own Post By Email email address.
They can then send emails to that address. The emails are sent to WordPress.com servers, where we process the email, remove signatures, and render the different shortcodes that you may have included before to actually send the post to your site.
If one of the Post By Email addresses seems to fail, could you send me some more details via email, like the Post By Email address, and some examples of posts you tried to send?

So are you saying that the “from” email address has to match something before JetPack will post? I wasn’t able to find anything referencing that in the documentation. If that is what you are describing, it is not often easy for some of the authors to make sure the “from” address matches, since the author might have a forwarded email address as their primary email address.

No, you can send emails from just about any email address.
