Shortcode for user email?

I’ve got a survey set up, and it requires a user to provide a name and email. I’d like to get a copy of their results sent to my email, but I’d like the email to come from THEM, not from ME. Currently, the emails I get are all addressed FROM my email address…which is driving me nuts. I know where to specify the sender email, but I have no idea as to HOW to do that…can’t find a short code that would automagically configure the emails to come from the survey taker. And yes, we have the paid version of the plugin.
