Unfortunately, in current version you can’t do these things.
You can test my new beta-version of plugin, that is hosted on GitHub. Direct download link.
This is completely rewritten version, that allow you to change carousel links and scroll amount. Don’t forget to deactivate old version before installing new.

have uploaded beta version and created gallery for the carousel, but when i try to set up carousel the gallery does not appear in the available galleries dropdown.. just says galleries not found

Try to reload page with galleries manager. Gallery is still exists?

I went to existing web page, deleted old shortcode then > insert shortcode > carousel link > then manage gallery link (as galleries not found in gallery dropdown > added new gallery > saved.
gallery shows under gallery tab in settings > shortcodes ultimate > but not in either gallery or carousel set up icons under gallery

After you have created new gallery, close this tab. Return to first step, and repeat it – Insert shortcode -> Carousel. And then new gallery will be available in dropdown.
No not working.. Settings – shortcodes ultimate – gallery – created new gallery – saved – closed tabs – insert shortcode – carousel link – gallery – not showing in drop down

Hmm, this is very strange.
Ok, I just released small update with some bug fixes on GitHub. Can you update your version? Direct download link.
Remove current version. Upload and install downloaded archive. Visit settings page and click Restore default settings button.
And then, try insert shortcode again. In new version I added Reload galleries link. This should help you.

Nearly there… the carousel images are 120 x 120 and are being auto resized somehow… how do i maintain original proportions of images
i think it has something to do when responsive is checked?
