Use a different Plugin for your contact form.
The JetPack one is a little simple.
I use Contact Form 7. And have disabled JetPacks contact form module
i used to use contact form 7 and i think jetpack is clean and simple. i guess i can just try manually adding extra fields

That would likely mean you’d be editing the code of JetPack, which will lead to problems when JetPack updates.
There isn’t a limit, though there is currently a bug when you get to a certain number of fields. When the form acts like it won’t accept more fields, just save it, then edit it again. Repeat as necessary.
A pain, but a workaround until we get this fixed.
