Easy Watermark doesn’t back up any images that were not watermarked. That means, if you just installed and activated the plugin, you won’t have any images backed up or even the ew-backup directory. Each image is being backed up while it is watermarked, so if you watermark 5 images of 1000 you will have only 5 in the backup directory. The directory is created with the first backed-up image.
That is, of course, if you haven’t disabled the backup option.
It is strange though that it shows you 15 images backed up, even if you don’t have the ew-backup directory yet. Please tell me if you already tried to apply a watermark to any images?

I did not apply a watermark yet since I wanted to check with you first, since I was worried to lose all the original images.

The backup option, while on, should save the originals of all your watermarked images. However, if you are really worried about losing so many originals, I suggest using an extra backup plugin, like UpdraftPlus, to make sure you have an additional backup if anything goes wrong.
As for the Easy Watermark backup, note that only the original sizes of the images are being stored in the ew-backup directory, so after restoring your images you need to regenerate the thumbnails (using f.e. Force Regenerate Thumbnails)

I did a full backup with UpdraftPlus and started applying the watermark.
At that point it started to count the backed up images from 0 and it created the ew-backup folder with all subfolders.
