For the outgoing email: You need to configure the SMTP. Available under Settings->Emails->SMTP
For the incoming/inbound email: You need to configure IMAP or connecting google App. Available under Settings-> CRM->Email Connectivity

outgoing email works perfectly using google App (under Settings-> CRM->Email Connectivity). We can send emails to customers, they receive it and we can see them also in the admin UI under the log activity of the contact.
However incoming email is not working with both google App and IMAP. We’ve setup them both, validated that the connection is successful, but the emails are not displayed under the log activity of the contact.

Not sure but outgoing email should not work without SMTP configured! As I said, you need to connect the SMTP and IMAP/Google Connect to have both incoming and outgoing emails.

Both SMTP and IMAP are configures and enabled.
When we send an email via WP ERP, we see it is shown in the activity timeline and the customer receive it. Perfect.
However, when the customer reply to this email, the email is showing in our inbox, but it is not shown by WP ERP and we lose track of the communication with the customer in the admin panel (it is showing only outgoing messages)
We’ve seen some other complaining about this issue but didn’t find a way to resolve it.

That topic was a different case @signalsbank; Another IMAP connection was causing a problem for that user- we found while investigating.
We can help you to investigate on this as well if you can contact our support center directly. Just need to be sure the IMAP connection in WP ERP is working or not breaking by any other plugin/connection.
