With Woo Instant Notification you can create two notifications , each in different language, actually you can add as many notifications / receipts as needed.
The receipt order data – the item names are parsed from wordpress / woocommerce , these will be in the default language as well as the default currency

It’s not possible with the current version.
I think about a solution where the items data is parsed say in English by default from woocommerce and then sent via the Google translate Api for translation and then the result is included in the receipt automatically.
But this is a custom solution. You may have to hire a php developer if you are not.
In what languages you need a copy of the receipt?

It’s not neccessarily a different language that I want it in, but I want it to print the items in a bit of a different form. I have a mapping tabel for all items.

Does that mean, I can map all items to something else? For example if I have an item called “boots”. I can map “boots” to “shoes” (just an example).

No, that should be done by a mapping plugin i believe. What i mean is that the order of the items in the order can be changed.

I’d like to setup that only admin receive purchase notes and customer don’t.

For example if you have created 3 notifications in Woo Instant Notifications PRO , you ca control who receives each notification, by defining the recipients for each notification
– Order Notification (intended for Admin / printing) send a copy to admin at mail.com
– Packing Slip Notification ( intended for delivery personnel) send a copy to delivery at mail.com
– Invoice / Customer Receipt ( Send to customer only)
For each notification in PRO you can also define multiple recipients in the “recipients” field comma separated emails.

Yeah, but I’m asking specifically about the purchase notes… because currently the purchase notes is automatically added to customers and not to the admin mail. It’s the notes you define for each product.
