If you didn’t want messaging to be available at certain times, I guess you would need to disable the plugin. However, you could also simply leave it active, and reply to the messages when you’re online. Conversations persist and don’t expire (though this becomes a bit dicier with Guest mode).

You could explain that replies might not be instantaneous outside of office hours, in your greeting text.
