Since updating WooCommerce my variable products are adding the parent product and not the variant product.

This is troublesome in many ways, since the price is not the right, and the SKU id in backend is not the right one.

Do anyone have a fix to this?

Hey @rheko,

Are there any JavaScript errors on the product page? There is a current bug in WooCommerce that allows the parent product to be added to the cart. That typically still shouldn’t happen because the add to cart button is disabled until a variation is selected.

However, if there is a JavaScript error on the page, then the parent product can be added to the cart and purchased.

A lot of sites had trouble with WordPress 5.5’s removal of the jQuery Migrate script. I would try adding that back to the site and see if that fixes it. This helper plugin will add the script back to the site for you.
