Could you post the URL of your site? Can I place a test order without the need to use my bank card? If I could have a look at your order received page, I might find the answer quicker.

Does it mean that according to you the setup is correct? And that it’s for reasons behind my control such as add block and so on I don’t have the GA matching my actual sales?

Yes, based on what I can see on your site, the setup is correct.
Perhaps users on the external payment page are not forced to visit the order received page.
