It’s just default WooCommerce functionality, I think. If you have a product there’s a “Copy to new draft” link which makes a new draft out of the chosen product. And everything gets copied except the taxonomies.

So I need to look in WooCommerce settings?

Thank you for your answer, maykato, I read somewhere to solve it like this but it went too far in time and costs to go into another plugin.

I dropped this idea anyway, now I’m trying out a new one…
