Just in case anyone searches for something like this, i solved this by removing “edit” links from posts/comments, and paring down the “contributor” admin interface so that they can only view their posts/comments.
It doesn’t solve the original issue, but means no edits can be made, unless they’re requested and then made by an admin.

Found it!
There is a field in “wp_posts” called “comment_count”, which needed updating too….
