I found my own answer and I thought I share it in case someone else can use it.
The captions that did not show in the Lightbox mode contained all one single word. By adding a space after the caption and Update the page where the gallery resides, the problem was solved.
Still struggling with :
Also, I would like to show only the captions, and not the ‘item x of n’.
If this can’t be avoided, then a larger spacing between the captions and the ‘item x of n’ text.
