Yes, the second photo is ShowIt, I was just showing that the pagination is on there and shouldn’t have a problem showing up on the actual website.
I know of custom taxonomy but I don’t really understand how it works… I know that showit does also have a limit of what it can do (especially without coding) so maybe I just found the bounds of it really quickly. I’ve thought about reaching out to their support but I wasn’t sure how much help they’d be since I don’t think it’s a technical error.
This is how I have the categories set up in word press:

I would like to have all my games have 1 category template (even if that means making individual templates for each game category), and my actual blog to have it’s one category template. If that’s not possibly for whatever reason, that’s ok. I have the custom posts types for the games so they’re not intermingling with the regular blog post. I was able to essentially make a blog page for the games by making the original custom template that I pointed out in the original post. I just for the life of me can’t understand why the pagination just stopped working because i changed the template name… One the category page I have it pulling 16 per page, and I have 31 posts in the Euro category, so there’s enough for almost 2 full pages of posts.
