I tested again and it doesn’t work for me.
I created a temporary login link for you for my site so you can see the problem yourself. Order #24 has a customer note. Open the Customer note email template and see how the preview doesn’t show the note.

Thanks for your response but unfortunately I don’t think this is how it works. Have you tested it yourself to check?
I have tried both ways and it is as I said.
1. If I just paste the shortcode, it outputs a working link with “Unsubscribe” as text and styled with lightgray color. (as you said)
2. If I create a link (like this:
<a href="{{cart.unsubscribe}}">my text</a>), it outputs a broken link with no href (like this:<a style="color: lightgray" rel="nofollow noopener" target="_blank">Unsubscribe</a> >my text).Please try it, send a test email, and investigate the issue.

Thank you for your quick response.
Here are a couple of screenshots: in 640px width (okay) and in 350px width (not okay).
To make it responsive, you could change the arrangement of the table data and/or create some parameters (like: remove=”price”) for the product table shortcode for removing data from the table.
Here’s an idea of a responsive table I found: in 540px width and in 320px width (it includes a media query though).

EDIT: After thinking about it, the last 2 bullet points (unsubscribe if unchecked) should not be included in my suggested steps, because in future checkouts this could unsubscribe subscribed users unintentionally if they don’t check the opt-in checkbox.

I’ll contact the developers of those plugins and let them know about the errors. But I don’t think I’ll able to follow the steps to replicate the issue, because I don’t even know what happened (or when) that caused the issue in the first place.
And to answer your question, yes, the product that I manually added is still unaffected.
Also, I just deleted the remained 2 sample products that lost their attributes and re-imported the official CSV file of the products using WooCommerce core importer, just to see if the issue happens again.
