@evanspj – trust me the plugin worked. You previously had JS errors of jQuery cookie not found. The plugin fixes that.
And yes that is how add to cart works. You must select a variation before the add to cart shows.

Looks to me its caused by your theme. Switch to 2012 theme and re-test.

If you’re just wanting to update, you can still go to your woothemes account and download the latest version and manually FTP it up to your site.

That is only 365 products a year and even after 10 years you would only have 3650 products. I’ve seen 50k+ products running on WooCommerce without any issues.
