Hi,
To add, it looks like the previously saved data is not pre-populating the title and description fields so these are empty on saving.
This means the default is shown on the front end everytime you save the page (if you don’t manually add a title and description on each save).
Hope that makes things clearer.

I have disabled all but:
ACF Pro
Classic Editor
The SEO Framework
Has not resolved the issue.
Have since updates all plugins and WP core to 5.8.
No change.
