Alright, the problem seems to be All in One SEO plugin. I disabled that, and all works well.
There also does not seem to be any error thrown in the error_log. Just the web page hangs when trying to edit or create a product.
Same is happening to me. It seems to only happen for WooCommerce products, but not WordPress posts.
