did you find an answer to this? I am having a similar problem – I have added loads of categories but now can’t edit them or add any more as either nothing shows up except the number of pages of categories in the admin section or I can’t assign them to a paretn directory. i am also using 3.0.1.
I had some success working in another theme but the problem keeps coming back and it is driving me nuts
