Have you looked into a ‘request a quote’ plugin? I believe such a plugin can address your requirements by providing a cart-like interface to your customers and they can send a product inquiry without paying for the order.
These plugins will display the selected products, quantity, individual price and subtotal in the front-end and admin side as well.

It seems like a theme conflict with the mini cart plugin. You may change the theme to storefront and check if the issue persists.
If it does, the issue might be caused due to conflict with a third-party plugin. In that case, you may try deactivating all plugins except WooCommerce and the mini cart and check if the numbers are then displayed as expected.
