I solved this problem by installing the Postman SMTP plugin. Give that a try.
Unfortunately I don’t think I have an answer to your question, but I would be extremely grateful if you could tell me how you were able to get the plugin to send the user an email once they have completed the quiz. For some reason I am not able to get this option to work.
