Currently Jigoshop associates shipping with the SubTotal. I don’t believe this can be changed but I’ll suggest to development.

The only way to show this tab is by having Attributes. You can add attributes on ‘Simple’ products without them having to be variables.

Also, Try a default WordPress theme, like Twenty Twelve. Just to see if there is a conflict.

Try disabling all plugins except Jigoshop and see if settings save. If not, temporarily change to a default WordPress theme, like “Twenty Twelve”
