Quantity is not relevant for this case, instead it can manage by the duration count and persons count.

Here it shows duration/length, days select, and the persons count as well.

1) Go to edit items and scroll down to bottom. There you can see manage availability section. Add a new availability rule by clicking the button provided. There you can manage the availability of slot by date range, week days and time2) could you share a screenshot for the back end item edit window. So that we can have a look.

In reply to: [Booking Addon for WooCommerce] Inventory ManagementYou can leave the product inventory as in stock. And manage the booking availability in item settings. Where you can set the maximum booking per slot. By default it will be one, you can change it to any number.
If the booking is full for a day, then a user can’t reserve that slot again.
