Ok. I could find the solution by myself.
It was the WPML Translation Plugin.
For all those with the same problem go to “WPML -> String Translation” and select the following strings:
admin_texts_woocommerce_email_from_name
admin_texts_woocommerce_email_from_address
It was just a simple missing translation that was set by default.

I am trying to figure out what plugin it might could be.
It’s a little strange that I am able to change the mail and name in the German version of my website. But if I switch to English and try to change it, it does not work.
Seems to be an issue with the WPML plugin…
