The GDPR Cookie Consent plugin creates a cookie named viewed_cookie_policy to record the users’ consent. The [delete_cookies] shortcode is used to delete this cookie set by the plugin.

The name of the cookie set by the plugin is viewed_cookie_policy. You need to change the name of the variable “cookie” to “viewed_cookie_policy”.

You need to add all the cookies used by your website one-by-one to the Add New page under Cookie Law Info. Add the title, description, type of the cookie (session, persistent, or third party), cookie ID, cookie sensitivity (necessary or non-necessary), and cookie duration. Then clicking on publish will list the cookies on the Cookie List page.
Then you can add the scripts for the cookies that are to be rendered when the user gives consent in the Non-necessary Cookies page.

Please update to the latest version of the plugin. The latest version allows you to use the <u> tag for underlining the text in the message bar.

The GDPR cookie consent itself is GDPR compliant. The plugin only sets one cookie on the browser (viewed_cookie_policy) when the user gives their consent and does not collect any user-related data.
