Your best bet would be to contact the developer that built it.
It doesn’t look like they are actively maintaining it, though seeing as it hasn’t been touched in nearly 4 years.
If you’re not able to get a hold of them, you may want to speak to your developer about building something custom or you or seeing if they can use the code here as a starting point for what you need.

I’m not able to replicate this behaviour. As you can see from my screenshot, I’m able to select all 3 categories and I’m able to access more if I choose to do so:

As such, I suspect that you’re dealing with either a conflict with your theme or with another plugin.
The best way to determine this is to:
- Temporarily switch your theme to Storefront
- Disable all plugins except for WooCommerce
- Repeat the action that is causing the problem
If you’re not seeing the same problem after completing the conflict test, then you know the problem was with the plugins and/or theme you deactivated.
To figure out which plugin is causing the problem, reactivate your other plugins one by one, testing after each one until you find the one causing conflict.

This is because you don’t seem to have a cart page.
You cannot remove items from the checkout page, you can only modify the contents of your cart when you are on the cart page.
The checkout page has a singular purpose… closing the sale.
I tried both the /cart/ and /basket/ URLs on your site and both of those lead to a 404.
If you want customers to be able to modify the contents of their cart, you’ll need to provide a cart page for them to do so.
