Uninstalling WooCommerce is an action on the server. It does not clean up anything on your computer (client) that you use to uninstall WooCommerce.

I tested removing the Checkout page ( added a Checkout block within ) at “WP-Admin → WooCommerce → Settings → Advanced” and was not able to check out.
After I set the Checkout page, Checkout worked.
Please try the above and let us know how it goes.
