Well, this plug-in was exactly what I would have written:

It gracefully sets the Content-type… Which populates both
the php header calls *and* bloginfo(‘html_type’).
Just set the right DOCTYPE from:
http://www.w3.org/TR/XHTMLplusMathMLplusSVG/#howto
and validate/clean up your theme.
