So I checked and the email appears in the WooCommerce email list.
There are two emails: Ready for pickup order and Picked up order, and both are enable. But the email sent is the one of the 3rd plugin not the one of your plugin.

Unfortunately it doesn’t work as I would like. Disabling email from your plugin also disables WooCommerce email. The email customization plugin therefore cannot send its own email.
Ideally I would have to keep the mail enabled, but make sure that it is overwritten by the other plugin.
