Version 4.1.1 should fix this issue. There will be another hotfix tomorrow, hopefully, that will fix the block editor crashing when opening the post or page that holds an a-z-listing shortcode.

I think you’ve discovered a new bug. The output is <i>supposed</i> to be ordered alphabetically, and as yours isn’t then something is wrong in the plugin. I’ll have to investigate and see if I can fix it in a patch release.

The plugin did not support the block editor until the version I released a few minutes ago (version 4.0.0). After you update to 4.0.0 you should find an

To add separate lists you need to use the plugin block multiple times on the page. Multiple instances on the same page are now supported in version 4.0.0 which I released a few minutes ago, when you add the listings using the block editor (support for the block editor is new in 4.0.0).
It is, however, not possible to easily use two title formats in the same listing (i.e. where you have proper nouns – i.e. names – and other titles in the same listing where you want the names formatted by last name and the other titles to be untouched)

I’ve just released a major version bump that includes a user-interface via the block editor to help you configure the plugin. Update to version 4.0.0 and use the WordPress block editor to add the listing – it should correctly display your custom post types in the post-type field.

Sucuri is falsely indicating that there’s an outdated WordPress due to the presence of
wp-includes/version.php, which is a similar name to a WordPress Core file. This is not a problem with the plugin and is a mistake by Sucuri (false positive).
