Found the answer, if anyone needs to know: It’s a client issue, at least with iPodder. The client software doesn’t pick up the title when you first subscribe, but it does the first time you check for updates.
I’ve been able to do all that, is there a way to add content that isn’t married to the sidebar.php file, so you could see how your content looks in various themes?
