I apologize. I had picked the link directly from the page I was referring to, it seems it was set back to the page featuring all three versions of the theme (because I picked the link from within the online demo I assume). My bad.

However, I was looking exactly for help on the item you picked: Text of portfolio pages (and also standard pages) of the „photography“ theme.

Unfortunately the code you provided did not work for me either. 😞

Do you know what else I could try or where I could look for documentation? / Which topics / direction I would have to look for in a documentation?

I assume you suggest a supported theme also for security issues?

I just like this a lot and have not found a similar / suitable one + did not really have the time to move all my content..
But yes, I am working towards a new page.
