Hi,
I am also experiencing the same issue on Sydney version 2.24, Fashion Shop starter site. I can control Font type and size with Header->Main Header->Style->”Enable Top-Level Menu Items Typography Options”, but color for the header menu items is getting overridden upon Publish.
