Zipping all uploaded files in a form before submission is not possible using the default WordPress form plugins or Forminator out-of-the-box.
We are checking this further with our SLS (Second Line Support) Team and will inform you accordingly.

Unfortunately, the request is out of scope of our SLS Team.
There is a library that can help, but it is not that simple to provide as a workaround, which you can find on https://github.com/Stuk/jszip
We have added this request as a new feature task for our Forminator team to be considered for the upcoming releases.
