We understand you want to replace the secondary sitemap plugin and only use the Yoast SEO sitemap. Indeed, that would be helpful as Yoast sitemaps are highly optimized and search engines friendly.
Regarding the Yoast sitemap, we would suggest submitting it in Google Search Console. Though you might see some slight difference in the graph while transiting to Yoast sitemap, we expect there shouldn’t be any impact on your site SEO.

So what I understand is that deleting the XML Sitemaps and transisting to the Yoast sitemap will not affect or impact our website, performance or SEO. This has been noted.

Should you decide to not use the other plugin that generates the sitemap, and decide to use the XML sitemap index generated by the Yoast SEO plugin, you need to make sure you customize it and make sure that the correct content is in the sitemap – https://yoast.com/help/how-to-customize-the-sitemap-index/
Then we do suggest that you make sure you remove any outdated sitemap and submit the correct /sitemap_index.xml URL in GSC – https://yoast.com/help/submit-sitemap-search-engines/#google-remove
